Amber Loom
A hawker cook tossing noodles in a flaming wok at a busy street-food stall
Hawker stall · Charcoal wok · Slow stock

Noodles woven over fire.

Amber Loom keeps it small: a short board of plates, one very hot wok, and stock that simmers all night before the shutters go up.

Signature plates

What the queue is for

Three plates carry the stall. Each one is cooked to order, so the first bite still has the smoke from the wok.

Our craft

Small batches, long nights

Nothing here is rushed except the last thirty seconds in the wok. We cook a short menu so each plate gets the same care at the end of service as at the start.

  • Charcoal-fed wok

A fierce, even heat that gives the rice and noodles their smoky edge. We don't use shortcuts or flavour powders.

  • Stock simmered overnight

Bones, charred onion and dried shrimp go in the pot before we close and stay on a low flame until morning.

  • Folded by hand

Dumplings and noodles are portioned each morning. When a batch is gone, it's gone until tomorrow.

A few friendly tips

The line moves steadily, and a little planning helps.

  1. Come just before the lunch rush or after the first dinner wave for the shortest wait.
  2. Order at the counter and keep an ear out. We call names, not numbers.
  3. Bring your own container for takeaway. We'll pack it gladly.
  4. Dumplings sell out first on weekends, so order them early.

Questions at the counter

Can I adjust the spice level?

Yes. Ask for mild, standard or fiery when you order. Our house sambal also sits on the counter for anyone who wants more.

Are there vegetarian options?

The Silk Thread Dumplings come in a mushroom and cabbage version, and the Chilli Crisp Tofu is vegetarian. Our broth is made with bones, so the noodle soup isn't.

Do you take reservations?

The stall is first come, first served. For groups and events, send a catering enquiry and we'll plan a pickup or delivery window with you.

What happens when a dish sells out?

We cross it off the board straight away so nobody queues for it by mistake. It'll be back fresh at the next service.
